I love the deep, rich flavor of espresso in my morning Americano, but got tired of spending a lot of money on barista style espresso makers that either 1. required a lot of monitoring, or 2. don't last. I don't do mornings well, so I count on my morning coffee to require close to zero brain power.I originally bought the smaller 4 cup Bialetti and loved the ease and results so much I decided to buy this bigger one. With this I can make my espresso once a week, store it in a ceramic coffee pot, add hot water, coconut milk, honey and collagen to the mug and Viola! I have an Americano that required no brain power! Love it!This coffee is almost Paleo compliant, except this coffee pot is made of aluminum. I thoroughly researched the implications of making coffee in aluminum before purchasing this, and decided the research is still too slim to dismiss aluminum coffee pots. If studies evolve to discount the safety of this model, I can always purchase Bialetti's stainless steel version. In the meantime, Shhh! I'm enjoying my morning coffee. :)
