I'm a dj and was looking for a wireless headphone solution for my mixer.If I connect this into my output, would it work? If so, is there any latency.

No it won't. Its a receiver, not a transmitter. Its designed for tablets, smartphones and computers to send bluetooth audio and have this unit receive it for amplification in a separate amp.. I'm sure it does that well, despite it being a clone of the Logitech unit.

can AirPods pros be connected to this?

This is a bluetooth receiver not a transmitter. So I wouldnt have thought so.

Does (this) Bluetooth support 6 channels, surround sound/5.1?

Well it works well on my old 5.1 surround sound .it's well worth buying!
