Nice working unit with very satisfactory results.
I just ran my second batch of Hatch chili and couldn’t be happier. The chili came out perfect, and peeled easily. The first batch had a learning curve, mainly in adjusting the flame. Initially, I had the flame too low which led to a sooty mess. Once I turned the flame up, it worked like a champ, no more soot. With the flame coming up eight to ten inches worked very well. If the flame is too low you will notice soot buildup. I als recommend clipping the stems of the chili so the stems don’t hook on the expanded metal of the drum. I placed the roasted chili in a plastic bag after pulling them out and let them cool. Not sure if this step is necessary, but it didn’t hurt. I’ve roasted about 80# so far and couldn’t be happier. A couple of recommendations, make sure the flame is about 8-10 inches above the ports. If you do this you won’t get soot on your peppers. When you load it, put in between ten and fifteen pounds of peppers. Make sure the handle bolts on the inside are nice and tight or if you go to reverse the drum it will slip. I have found that clipping the stems is not necessary, they will burn off anyways. Listen to the snap, crackle, pop of the pods as they cook. When that stops rotate the handle just enough that the hot layer falls to the rear. Repeat until they are looking pretty good. Then, give the drum a two or three turned to mix them. You will notice that the more cooked peppers will end up on the bottom. Reverse the handle slowly until the peppers on top roll towards the burners. Repeat this process until the peppers have become soft/flacid and charred. Over cooked a bit is much better than under cooked. If they are under cooked it is a real pain in the rear trying to peel them!

Junk!
One star is too many... Please Please, don't buy this roaster! It is the worst piece of junk I have bought on Amazon. Wrong regulator. Sooty flame. The door has no real latch, and will drop open constantly without baling wire holding it closed. I ruined 1 batch of my precious Anaheims , and back it goes.

This chile roaster is AWESOME!
This chile roaster is AWESOME! We were able to do about 15 lbs at a time, and although it seemed to take a little while to roast the chiles, the end result was fantastic! Also, while it is true, there were no instructions, my husband had the regulator on within a matter of minutes. The roaster is very good quality, and durable. I would definitely purchase again, and would also refer to all friends!

It's....ok.
It's just ok. It worked enough to get our chili roasted, but it's definitely not a very well thought out design. It started warping about the 3rd batch. It only did well with about 10lbs at a time. It was quick to assemble but not very sturdy, the cook time was as expected.

Good Chili roaster!!
I have read all the reviews, I just roasted 25 lb of Hatch Chili’s and it took about 8-10 minutes to roast 12 lbs at a time. Loved the result. I give it 4 stars because as the others have said, there are no instructions, and my roaster had one of the fire jets was knocked off upon delivery. I own a welder so I was able to repair it instead of having to return. I love how the end product came out, I will use it to roast corn, and vegetables when I make salsa verde.

This works and works well. Plus, customer support is many times better than most. Initially mine would only produce yellow soot causing flames. I contacted the company and without questions she suggested sending me another regulator, which they did that day. This bad boy will now melt your neighbors candles 3 zip codes to the north.

Too cheep material and design!
Very cheaply made and the burners produce a weak flame that leaves the Chillies with a sootie taste.

It took us a bit to figure out the roasting method, turning speed and flame, but we got it and the peppers turned out amazing in only 7 minutes. The latching is a bit complicated that’s why I gave it 4 stars also the base moves when you’re turning the handle, will clamp it down next time.
