An extremely useful guide, not only for chalet staff but also for anybody catering for family or guests when there isn't unlimited time for preparation and cooking. The range of recipes is excellent and the instructions exceptionally clear. Recipes and suggestions for catering for special diets plus notes on food safety are also included. There are also tips on menu planning and getting yourself well-organised. Each chapter starts with guidance on maximising the success of your menu. Having ingredient quantities clearly laid out for 6, 12, 18 and 24 guests is ideal for speeding up shopping and minimising wastage and helping with budgeting.Whilst I would use this for efficient entertaining at home, I feel it is perfect for its target audience of chalet staff.

Excellent book and easy to follow especially with the quantities for number of servings . Also indicates clearly for special dietary requirements . The only booked needed for the whole season !
