Why didn't I know about this book before?
What a wonderful book! I've been cooking for over 50 years and love it. I have collected a great many cook books over the years with several being of the "cooking school" style books similar to this. Many of these books are rather large and not easily navigated, but this book seems to remove all the 'fluf' and gets straight to the point.Lately I've been helping a few young men learn how to cook. One of them has already looked through this book and couldn't believe how simple and easy to use it is. I couldn't agree more!At this present time if I were asked for a simple yet precise book to teach someone without cooking experience how to cook this would be the book I would first guide them to. It is easy to use and straight to the point. I will be purchasing more of this book for gifts as to me it has great value.

Given as a gift 5 times already!
This cookbook is so awesome, I’ve bought it multiple times. It seemed like the perfect gift for my son who is just starting to cook. I like it so much, I bought a copy for myself. (Even though I’m an experienced cook, I found a number of useful tips in it.). Everyone I told about the book wanted a copy, so I kept buying it.The cookbook is loaded with photos, which I like. It includes basic info on the 6 cooking techniques; unless you’ve taken cooking classes, you’ll likely learn something new. It also includes several recipes in each section.My favorite part is the section on roasting veggies. It gives flavor combos for veggies and herbs/spices. Very flexible so very useful. Shows it in text and photo formats, both of which are awesome.Can’t go wrong with this cookbook!!

Helps You Get Comfortable In the Kitchen!
I got this book because I wanted to have enough knowledge to go in my kitchen and make something from what I've got and have it be delicious. For me, this book delivered. It helped me improve my knife skills so that chopping even copious amounts of vegetables is a breeze. I LOVE going to a butcher and bulk buying meat with the confidence that I can prepare each piece of meat without a recipe (unless I'm trying something new). I made a couple of the recipes, but now I can get CREATIVE with meat and veggies and sauces because I know the basics. It's really freeing and I appreciate this book very much!

A Go To Essential
This book has quickly earned a spot on my go-to cookbook shelf. The instructors from Home Cooking New York are amazing and this book captures a number of their classes in one convenient collection. If only I had looked at this sooner, many steaks would have come out nicer!

What a fantastic read!
I heard Jennifer Clair on Vox Pop on WAMC NPR just recently. She was so interesting to listen to, that I went right to Amazon to buy her book. I read it in one day. Just couldn't put it down! Great techniques even for someone who has been cooking for a long time. Lots of delicious looking recipes too. What a joy this book is!

A wonderful cookbook!
This cookbook is essential for the individual starting out in the kitchen, or for anyone who wants a quick tutorial about knife skills, etc.. The cook book is enjoyable to read, and the recipes are fantastic. These dishes can be mainstays for your family. The Pan-Roasted Lemon-Rosemary Chicken is delicious. This cook book is a wonderful gift for anyone!

Say it ain’t so...
I purchased this as Kindle Edition. Two pages appear at a time with no option to view one page at a time. The directions indicate to double click on a word to enlarge the print. Then you have to double click again to clear before double clicking again on the the next word. It’s impossible to read the cookbook and I can’t even imagine trying to cook from it. I will have to determine if there is a refund process on Kindle books. Something is very wrong with the Kindle edition.

Not for vegetarians and vegans. Even the vegetable soup requires anchovies and Reggiano cheese
There are only 112 pages. More than half are about cooking meat or include meat or anchovy fillets in the recipes. I counted just a dozen dishes that were OK for, or could be adapted for people who don’t eat meat, fish or dairy.Having said that, Jennifer Clair‘s advice about the six cooking processes is excellent…yet her ideas on good nutrition are not always in accord with much of the current advice on healthy eating in the UK….So, overall, an excellent buy for people who either don’t know or maybe don’t fully appreciate the cruelty accepted as normal with which millions of the food animals are kept in today’s world. For those who have rejected food derived from killing,,,some very good but expensive pages of advice on cooking vegetables.
